Gouda is a half day with a long lunch. Arrive for the Thursday cheese market at 10:00, see the Waag and Sint-Jan before it closes, eat on the Markt, then either walk the harbour or take the twenty-minute train to Utrecht or Rotterdam for the afternoon.
This assumes a Thursday between April and August. On other days, start at Sint-Jan instead of the market and the plan still works; on Sundays the church is closed to visitors.
