Why visit Gouda?
Gouda is a small old town that happens to have a world-famous name. The Markt is one of the largest in the Netherlands, with a Gothic town hall from 1450 standing free in the middle of it, the Waag of 1668 on one side and the Sint-Janskerk, the longest church in the country, behind.
The Goudse Glazen, sixteenth-century stained glass windows in Sint-Jan, are the reason art historians come. The cheese market, every Thursday morning from April to August, is the reason everyone else does.
The stroopwafel was invented here. Bakeries on and around the Markt make them fresh.

What makes Gouda different
The cheese market is a staged re-enactment for visitors, and it is honest about that: farmers in traditional dress, hand-clapping to seal the price, cheese carried on sledges. Go for the atmosphere, not for commerce.
What is not staged is Sint-Jan. The seventy-two windows survived the Reformation, the wars and a 1552 fire’s aftermath and are the most complete set of sixteenth-century glass in the Netherlands.

Local context
Gouda grew on cheese, beer and cloth at the meeting of the Hollandse IJssel and the Gouwe. Its cheese market has run for centuries; the current Thursday market is a staged version for visitors, with real cheese and real traders.
The Goudse Glazen were made between 1555 and 1603, before and after the city turned Protestant, and were donated by princes, cities and church figures; William of Orange gave one. They survived because the city protected them, removing them in wartime.
The stroopwafel, two thin waffles with caramel syrup between, was first made in Gouda in the late eighteenth or early nineteenth century by bakers using leftovers.
